Lentils are a great source of protein. Most people don't know they are also rich in iron, calcium and soluble fiber (as are most beans/legumes). Lentils come in many colors, not just brown or green! Serve with brown rice as a vegetarian main dish, or as a side with a piece of fish or chicken.

Makes 4 servings

Ingredients:

1 T olive oil
3 cups chopped vegetables (carrots, celery and zucchini all work nicely)
1/2 cup diced onion
1/2 lb pink/red lentils (about one cup)
3 cups reduced-sodium vegetable or chicken broth
Curry powder to taste
2 cloves garlic, minced
1 T chopped gingerroot
Tamari to taste

Heat olive oil in a large pot with a couple of tablespoons of the broth and add onions, garlic and ginger. Saute about 2 minutes.

Add lentils, broth, remaining vegetables, curry powder and tamari. Stir, then let simmer until lentils and vegetables are tender, about 40 minutes. Add more liquid if necessary.
